December 15 - A Quick and Easy Recipe

Hey, there! It's Susan and I'm back with a quick and easy recipe for you today.

Everyone seems to be very short on time during this busy season and while you might want to make a special treat to bring as a hostess gift or offer as dessert at your holiday dinner, you probably don't want to spend hours shopping for ingredients and preparing that treat.  Well, I have the solution for you!  I'm sharing a chocolate truffle recipe that is a fixture on our holiday dessert table.  There would be rioting in our family if I didn't make it!  And the best part - it uses only three ingredients, takes very little time and requires no cooking or baking experience - how's that for a treat?!

Here's the recipe (I'm not sure of the original source as we've been making these for many years; if you happen to know where this came from though, please let me know and I'll be happy to credit the source!)  And I'm also sure that they aren't terribly healthy, but I think it's ok to indulge a little at this time of year.



Chocolate Mousse Truffles

2 Hershey Chocolate Bars (8 ounces each)
1 8 ounce container of Cool Whip
Vanilla Wafer cookies, finely crushed (about half of a standard size box)

Melt the Hershey bars over a double boiler.  Cool until the chocolate is lukewarm and then fold in the Cool Whip. (At this point, I usually loosely cover the mixture and refrigerate it for a few hours, which makes the next step easier.)
Drop the chocolate/cool whip mixture into the crushed wafers.  Roll and place on parchment or wax paper. Keep refrigerated until serving.


You can place the truffles in mini cupcake liners, place them in a box and deliver them to someone as a treat.  Or, you can do what I do and just pile them up on a platter - they don't last very long at all at our house!  You can see them in the center of this photo:
